Ingredients

Serves 1-2
  • 1 package of udon

  • 2 cloves of garlic
  • 4 tbsp unsalted butter
  • 1 tbsp yuzu juice
  • ¼ cup heavy cream
  • ¼ cup grated parmesan or pecorino
  • zest of 1 lemon
  • salt
  • black pepper
  • chopped parsley for garnish

Instructions

Boil udon noodles according to package instructions and set aside.

Heat a pan and add 4 tbsp of unsalted butter until fully melted.

Grate in the garlic cloves and sauté until fragrant.

Add in as much freshly cracked black pepper as you desire into the pan and sauté to toast the pepper.

Add in the heavy cream, yuzu juice, udon and sauté for 1–2 minutes.

Add in ¼ cup of grated parmesan cheese and sauté until mixture coats the udon noodles. Add in more cream as needed to loosen the mixture and add in more cheese as needed to thicken the sauce.

Salt to taste.

Finish with lemon zest, chopped parsley, and more freshly cracked black pepper as desired.
